I'm a bit surprised that you mensioned using set radius curves. On all my layouts, I've used flexitrack.
Apart from that,what you've listed sounds pretty good. You can use the two leveling to drop the storage sidings out of sight below the baseboard.
Work up a few track layout ideas and see what looks good. But remember keep in mind what you want you want out of the layout. Do you enjoy shunting wagons, or do you like to see trains running round the board...?
