Chris are you intending modern image with diesels or steam era?
Steam era
J94's / Austerity as made by Hornby, the bachmann pannier tank or any of the industrial loco kits around. 16 ton mineral wagons or 4 wheel hoppers, R6400, 6401, 6361 even the early livery R6331 MGR is prototypical for the 1980's with steam!
Diesel era
66's, 47's, 56's 08's for shunting or kits for NCB diesels and the MGRs again or even the big modern bogie JHA's with big flood loading sheds rather than the old pithead gear and loading hoppers.
Pocketbond Classix and Base toys both do the 1960's to 80's lorries and cars some in NCB liveries while cararama do a lot of modern vans and cars. See any decent model shop.
Diggers,
Norscot, NZG for really big stuff for opencast coal mines but they are a bit expensive, Cararama etc again for smaller stuff.
Buildings
Steam and early diesel era, see the new Bachmann and Hornby coal mine buildings.
Modern era sheds from pikestuff avaiable from Modern Structures In Miniature or kits from Walthers available from Model Junction in Slough.
