Simply shim the code 75 up so that the railheads are level and solder the rails together. Thin card or plastic sheets can be used underneath the finescale track to raise the level of the railheads. I used a code 100 Atlas diamond crossing with Peco Finescale track on my first American HO scale layout (many years ago) and it ran without problems. In actual fact I had insulated joins between the points and the diamond, the tracks were shimmed to level then glued in place, and soldered joins were used between the diamond and the sidings beyond.
